Turmeric and chilli do not spoil quickly. They degrade quietly — colour, aroma, curcumin and capsaicin all fade under the wrong conditions.
Below 25°C, and steady. Fluctuation drives condensation inside the sack.
Relative humidity under 65%. Above it, dried spice starts reabsorbing moisture.
Dark or opaque containers to protect colour; steady circulation to prevent mould.

Properly stored turmeric and chilli hold quality for 12–24 months from harvest.
Erode turmeric, Guntur chilli and Byadgi chilli are not interchangeable commodities. Soil, rainfall and post-harvest practice move curcumin, colour and volatile oil — which is exactly why a grade alone tells you so little.
When you evaluate an offer, ask for the region, the harvest window and the batch-level curcumin figure. If a supplier cannot give you all three, you are buying a promise, not a specification.
