Polished or Raw?

Polishing tumbles the dried rhizome against an abrasive drum to take off the rough outer skin and the field soil that clings to it. What comes out is a brighter, more uniform finger that photographs well in a retail pack and needs no further cleaning before it is bagged.

That finish costs a little curcumin — the outer layer carries some of it — which is why polished material runs 3.5% to 4.8% against the 4.0% to 5.5% of raw fingers. It is a deliberate trade: appearance and pack-readiness in exchange for a point of curcumin. If you are extracting rather than retailing, raw fingers are the better buy.

Buying Notes

What to Specify

Choose polished when the rhizome will be seen by the end consumer — glass jars, clear pouches, whole-spice retail lines — or when your packing line has no cleaning stage of its own.

Choose raw fingers when the material is going into a mill or an extraction plant, where surface appearance is irrelevant and the extra curcumin goes straight to your yield. Minimum order on polished material is 1,000 kg because the polishing run is set up per lot.
